Recipe of the Month

Thank you Jay, for contributing your tofu and peas recipe. This is just one of Jay’s delicious vegetarian creations we get to sample each potluck Sunday.

                           Curried Tofu and Peas

Ingredients:

2 cups DicedTofu                                                               1/2 teaspoon sugar
1 cup peas                                                                          ¼ teaspoon turmeric powder
1 ½ cups diced onions                                                        ¼ teaspoon garam masala powder
1 ½ cups finely chopped tomatoes                                      ¼ teaspoon cumin powder
1 teaspoon ginger garlic paste                                            ¼ teaspoon methi (Fenugreek)
1 teaspoon chili powder                                                      3 tablespoon oil salt to taste

Procedure:

1. In a pan, apply a tablespoon of oil and saute’ the tofu until brown on both sides.
2. Crush the onions in a mixer and keep aside.
3. In a pan, heat 2 tablespoons of oil and fry the onions on low heat for about 5 minutes.
4. Add the ginger garlic paste and sauté them for few more minutes, now add the chili powder, turmeric, salt, sugar and garam masala. Add the chopped tomatoes and sauté on low heat for another 5 minutes or until the raw smell goes.
5. Add a cup of water, bring to a boil.
6. Now add the fried tofu, cooked peas, cumin powder and methi.
7. And simmer at low heat for 10 to 15 minutes or until it forms a thick gravy/curry.
8. Garnish with fresh cilantro, as necessary.
